Lemon Honey Cordial Concentrate

I used to make this cordial concentrate with sugar and everyone loved it, but decided we really needed to try to be more healthy, cut our sugar consumption and use our honey instead. Everyone knows lemon and honey is a tried and true method to help boost the immune system and soothe sore throats and pesky coughs. 2 cups lemon juice
1 teaspoon of rind from lemons
1 litre of boiling water
500g Tui Bees Honey
1 tablespoon citric acid 
1 tablespoon Epsom Salts (optional)


Bring water to boil, reduce heat, add honey and stir in well.

Place the rest of the ingredients in and stir in thoroughly.

Store in clean glass jars. 

Store in fridge – it will keep fresh for a week or so.

To serve, pour a small amount of syrup into a glass then top up with cold (or hot) water.

You can also add some grated, cooked ginger to this recipe to give it some added taste and change up the taste a bit.
